Citrus Herb Roasted Chicken

Recently, I’ve been making more food content (videos!) on my instagram and just posting the recipes there, so if you’re only following the blog, you probably haven’t seen them. So I’m taking the time over the holiday weekend to put all of those recipes here for easy access for blog-only readers.

Right of the oven, an easy, delicious meal!

Citrus Herb Roasted Chicken

Ingredients
4 bone-in, skin-on chicken thighs
1 bunch parsley
6-8 sprigs of thyme
1 orange, sliced into 1/4” rounds
1 lemon, sliced into 1/4” rounds
2 heads of garlic, cut it half across the diameter
olive oil
salt and pepper

Instructions
Preheat your oven to 425F with the rack in the middle. In a large, oven-safe skillet, add in the parsley, thyme, orange slices, lemon slices, and garlic to make a nice bed for the chicken. Drizzle the aromatics with a tablespoon or so of oil. Take the chicken thighs, and season generously with salt and pepper, and drizzle with oil. Place on the bed of aromatics with the skin side up. Bake until the internal temp is 165F, about 35-40 minutes. Discard the aromatics and reserve the pan sauce. Serve the chicken with the pan sauce.
