Smores Cookies

You know when a craving just strikes and there’s not a whole lot you can do about it aside from just leaning in to it? Yeah, these are those cookies.

This is a riff on the chocolate chunk cookies from a while ago, updated to reflect the recipe here. You can also make them along with me by watching the video here.

Smores Cookies
1 cup unsalted butter, softened
1 cup white cane sugar
1 cup packed light brown sugar
two eggs, room temperature
2 teaspoons vanilla bean paste or vanilla extract
1 teaspoon baking soda
3 cups AP flour
1 1/2 cups chopped milk chocolate
1 1/2 cup mini marshmallows
Flakey salt, optional (not really)

Preheat oven to 350-degrees Fahrenheit.

With an electric mixer, cream together the butter and sugar. Once combined, add in the eggs one at a time, followed by the baking soda and vanilla. When the dough is formed, slowly add in the flour. After the flour is incorporated, fold in the chocolate pieces and marshmallows. Scoop or roll dough into 1-inch sized balls and place on a cookie sheet prepared with parchment paper. Sprinkle the top with flaky salt. Bake for 11-14 minutes, and add time as needed.
