Keto Bagels

Consistently blogging is not something I’m good at.

Keto is having a moment right now and while I tried it and didn’t really work for me – I don’t think I was doing it right – I know a lot of people who really enjoy it. These bagels are quick, easy, and really good. They’re so versatile and you can make them whatever flavor you want by changing up the spices used or cheeses you top the bagels with, and can be made in less than 30 minutes.

Keto Bagels
INGREDIENTS

2 cups almond flour
1 tablespoon baking powder
1 teaspoon garlic powder
2 teaspoons Italian seasoning
2 eggs, beaten
3 cups shredded low moisture mozzarella cheese
5 tablespoons cream cheese
1 egg, beaten for egg wash
Extra seasoning or shredded cheese for topping

INSTRUCTIONS
Preheat oven to 400°.
Prepare a baking sheet with parchment.
In a bowl, whisk the almond flour, baking powder, garlic powder, onion powder, and dried Italian seasoning together.
In a large microwave-safe bowl, combine the mozzarella cheese and cream cheese, and microwave for 1 minute and 30 seconds. Remove bowl from microwave and stir to combine. Return to microwave for 1 additional minute. Mix until well combined.
To the mixing bowl, add the 2 eggs and the almond flour mixture. Mix until all ingredients are well incorporated. If the dough is difficult to work with, put it back in the microwave for 30 seconds at a time.
Divide the dough into 6 equal portions. Roll each portion into a ball and form into a bagel shape by poking a hole in the middle. Place on the parchment paper on the baking sheet.
If you are topping the bagels with seasoning, now’s the time to add the egg wash. If you’re putting cheese on top – no need to add an egg wash.
Bake for 13-15 minutes or until golden brown.
