Traditional Cranberry Sauce

We are in the final stretch! Your turkey should be thawing, your grocery pick up order should be placed, and instead of vacuuming your baseboards and prepping for whoever might be coming, you should just make this cranberry sauce. It only takes about 15 minutes, all done in one pan, and you can cross one thing of your self inflicted impossible list of to-dos before the holidays.

Cranberry Sauce
Ingredients
1/2 cup white cane sugar
3/4 cup orange juice, preferably from concentrate.
12 oz fresh cranberries
1 small bunch of sage
3-4 sprigs of thyme
2 star anise pods

Tools
Sauté or saucepan
liquid measuring cup
dry measuring cup
serving bowl
spatula
tongs

Instructions
In your sauté or saucepan over medium heat, add the sugar and orange juice, stirring until mixed together. Add in almost all of the cranberries, leaving about 1/4 reserve to put in near the end of cooking. Add in the sage, thyme, and star anise. Cook over medium heat, stirring occasionally until all of the cranberries have burst and the mixture starts to thicken about 10-15 minutes. Stir in the reserved cranberries and stir in near the end. Once the reserve cranberries have been mixed in, take out the sage, thyme, and star anise pods. Transfer to a serving bowl and let cool completely. Can be made up to a week before serving.
